I suggest trying to cook pies in the oven from the dough on kefir. The recipe for the dough and toppings is extremely simple, and the result is amazing.

Baked apple pies are very tasty, lush and airy, and the dough itself is thin. And most importantly, even the next day they are just as soft and tasty, as if only from the oven.

Ingredients:

  • butter - 50 g
  • kefir - 250 ml
  • salt - 1 tsp.
  • flour - 400 g
  • vegetable oil - 3.5 tbsp. l
  • fresh yeast - 20 g
  • apples - 5 pcs.
  • sugar - 3 tbsp. l
  • yolk - 1 pc.
  • milk - 50 ml.

The recipe for pies with apples:

  • Apples - 4-5 pcs. (I have small ones),
  • Sugar - 2 tbsp. spoons
  • Lemon juice - 2 tbsp. spoons
  • Cinnamon, cardamom and other spices for baking - to taste.

  • Milk - 250 ml.,
  • Sugar - 3 tbsp. spoons
  • Yeast - 25 pressed (wet) or 7 g dry
  • Salt - 0.5 tsp
  • Eggs - 1 pc.,
  • Flour - 3.5 cups (about 450-470 g.),
  • Vegetable oil - 100 g.

How to bake apple pies in an oven from pressed yeast

We offer to prepare delicious yeast pies with apples. This recipe uses conventional pressed yeast. Some housewives prefer to use this particular type of yeast, because They believe that baking keeps freshness and aroma longer.

We will need:

To prepare the dough:

  • Eggs - 2 pcs.
  • Sugar - 180 gr.
  • Milk - 250 ml
  • Pressed yeast - 18 gr.
  • Butter - 100 gr.
  • Flour - 600 gr.
  • Zest of half a lemon
  • Salt - a pinch
  • Vanilla Sugar - 1 pack (8 g.)

To prepare the filling:

  • Apples - 1300 gr.
  • Sugar - 4 tbsp. l
  • Butter - 1 tbsp. l

Cooking pies start with dough. To do this, put the yeast, slightly mashed with your fingers, in a clean, dry bowl. Add 1 tbsp. l Sahara.

Pour half the cooked warm milk and stir until smooth. Add the flour (4 tbsp. L.) And stir.

The dough should resemble thick sour cream. Cover with cling film and set for 1 hour in a warm place for fermentation.

In a second bowl, mix sugar, salt, vanilla sugar, eggs.

Pour the remaining milk, melted butter and add lemon zest (to taste).

Whisk all the ingredients with a whisk. Add this mixture to the dough, mix well and add the flour.

The dough should turn out not sticky, it is easy to move away from the walls of the bowl. Cover with cling film, let stand for about 2 hours.

During this period of time the dough will rise. We crush it twice, approximately with an interval of 1 hour.
It's time to cook the filling. Wash the apples, peel, remove the core, cut into 1x1 cm cubes.

Put a piece of butter on a preheated pan.

Pour sugar and immediately spread apples. The filling should not be too soft and mashed. Apples should become slightly soft.

We spread them on a sieve, let the resulting syrup drain. Then put it on a plate, let it cool completely.

We divide the dough into approximately 23 pieces, make balls out of it, which we will then stuff with apples. We cover with a film so as not to wind off.

From the ball we make a round cake, put apple slices in the middle and glue the edges of the dough. We form pies, put on a baking sheet covered with parchment. We give a proofing time of about 30 minutes.

Each pie is gently greased with yolk diluted with 1 tablespoon of milk. We send the pan to the oven, heated to 180 degrees for 30 -35 minutes. Baking times may vary depending on the operation of your oven.

The pies are ready, you can put a teapot and enjoy delicious fragrant homemade pastries with apples.

Then you should chop the apples finely with a knife or pass through a meat grinder (you can rub through a sieve to get mashed figurative mass). Pieces of dried fruit to combine with sugar, mix. Put the mixture back on fire and boil until thickened. After cooling, fill the dessert with the finished filling. In order to improve the taste, you can add vanilla, almond extract, grated lemon peel (orange), ground cinnamon, citric acid (or a few drops of natural lemon juice).

If you want the filling to crunch a little, put fresh apples that are not blanched inside the baking dish.

We form pies

Approached dough should be divided into pieces, which we will lay on a surface sprinkled with flour. The sizes of the slices are with a large chicken egg. Each piece of dough is a future pie. Particularly demanding housewives distribute the dough into pieces by weight, so that the pastries look perfect, all the pies are the same.

Roll out with a rolling pin (or crush with your hands) each part of the dough.

Put a filling on each flat cake (1 teaspoon with a slide). To taste, you can sprinkle a little filling with sugar (but I usually don’t do this, apple filling is so sweet).

We pinch the pie so that there are no holes left. We spread on a baking sheet covered with parchment paper.

Now you need to grease the pies with apples, so that in the oven they are covered with a golden brown.

The secret of a crispy golden crust is simple - mix the yolk of one egg with a pinch of salt and add 1-2 tbsp. tablespoons of milk.

I noticed that if you grease the baked goods not just with the yolk, but with the yolk with water or milk, the surface is beautiful, glossy and not as dark as when greased only with the yolk.

After 15 minutes, our pies will “grow up” a little, increase in size. Now is the time to go to the oven!
5 minutes after the pies sat in the oven, you need to reduce the baking temperature to 160 C and bake another 25-30 minutes.
After half an hour, the pies with apples in the oven are ready. We take out a baking tray with pies, put it on a plate or in a bowl. With hot tea, milk or kefir - it will be delicious with any drink.
